Pete’s {About} Meatloaf

{About} because that's how my husband measures.

Yields10 Servings
 2 lbs Ground Beef
 1 lb Pork Sausage
 1 ½ lbs Ground Venison
 1 lb Ground Elk
 2 Andouille Sausages {cut up}
 1 Bell Pepper {diced}
 1 Onion {diced}
 3 Eggs
 1 ¼ cups Oatmeal
 ½ cup Eola Crest Cattle Meat Rub
Glaze
 ½ cup Ketchup
 ¼ cup Mustard
 1 ½ cups Brown Sugar
  cup Milk

Mix together {about} 5 lbs of meat using 2 lbs of ground beef and 3 pounds of other meat including, but not limited to ground venison, ground elk, sausage, and andouille.

Mix in onions,peppers, oatmeal, eggs and Eola Crest Cattle {Meat Rub}.

Form into pan and sprinkle with Eola Crest Cattle {Meat Rub} to lightly cover the top.

Best if smoked for 4-6 hours. Then crank your grill up to 350 degrees. Pour the glaze on. Cook until meat thermometer reaches 160 degrees internal temperature {About} 45 minutes.

This is another area where {about} comes into the recipe. The amounts of the glaze ingredients are all approximate based on your personal tastes. Combine your ingredients and cook on medium heat until bubbles slightly. Then pour over meatloaf when you turn grill up to 350 degrees.
